Pirina jabolčna pita s kokosom / Spelt apple coconut pie

Ob besedi ozimnica se največkrat spomnim na jabolka. In na klet pri stari mami, kjer je dišalo po domačih jabolkah. Takih že malce nagrbančnih, mehkih, a še vedno dobrih.

Tokrat sem pito poskušala narediti na bolj zdrav način, brez gore rafiniranega sladkorja. Moji poizkuševalci pravijo, da je bila odlična in moram reči, da je tudi meni zelo teknila. Vsekakor pa je drugačna od klasične pite in štrudla, se razume. Če jo boste delali bom vesela vaših komentarjev.




Testo:
150 g pirine moke
20 g mletih mandljev
½ žličke vanilije
½ žličke pecilnega praška (vinski kamen)
2 žlici kokosovega olja
5-7 žlic hladne vode

Nadev:
2 večja jabolka
50-70 g kokosa
1/3 žličke vanilije (ali strok)

na krhlje narezano dodatno jabolko
javorjev sirup (žlica, dve)

Moko zmešamo z mandlji, dodamo vanilijo, pecilni prašek in kokosovo olje (sobne temperature, ne tekoča  oblika). Z rokami in prsti vse sestavine dobro premešamo, da dobimo neke vrste “mivko”. Dodajamo hladno vodo in zgnetemo v testo (ki zna biti precej trdo).  Sploščimo ga v disk, zavijemo v plastično folijo in damo v hladilnik počivat za dobre pol ure.

Za nadev olupimo dva večja jabolka in ju naribamo. Dodamo kokos in vaniljo ter dobro premešamo. Jabolk ne odcejamo, saj kokos popije odvečno tekočino.

Testo vzamemo iz hladilnika in ga pustimo na sobni temperature stati še 10 min (kokosovo olje postane v hladilniku namreč zelo trdo in je testo zato nemogoče zvaljat. Ne obupat :)). Testo denemo na pomokano površino in ga s pomočjo lesenega valjarja razvaljamo, pomagamo si tudi s prsti. Previdno ga preložimo v pekač za pito. Pritisnemo od robove, odvečno testo odrežemo, dno pa prešpikamo z vilicami.

Napolnimo s pripravljenim nadevom (jabolka+kokos), po vrhu razporedimo na krhlje narezano jabolko.  Pečemo na 175 C približno 35-40 minut. Ko je pita pečena, jo takoj premažemo z žlico ali dvema javorjevega sirupa. Postrežemo s kokosovo smetano (lahko tudi navadno sladko smetano).


** Testo je zelo drugačno od klasičnih pit, malenkost težje se sprime skupaj, med valjenjem se rad malce "zlomi".  Testo s pomočjo vode samo zakrpamo nazaj.

Spelt apple coconut pie



150 g spelt flour
20 g ground almonds
½ teaspoon vanilla
½ teaspoon baking powder
2 tablespoons coconut oil (solid)
5-7 tablespoons cold water

Filling:
2 large apples
50-70 g coconut
1/3 teaspoon vanilla powder

1 apple cut into slices (for the top)
maple syrup

Mix together spelt flour, almond, vanilla, baking powder and  coconut oil (in a solid condition). Rub all the ingredients between your hands and fingers (it feels like you are playing with sand).  Add cold water and knead the dough. Flatten into a disk and refrigerate for half an hour.

For the filling:
Peel two large apples and grate them. Add coconut, vanilla powder and mix well. There is no need to drain the grated apples!

Take the dough out of the refrigerator and leave it on the room temperature for about 10 minutes (coconut oil gets really hard therefore is quite impossible to roll out the dough).  Place it on a floured surface and using a wooden pin roll out the dough.  Use your fingers, too. If the dough breaks, just put it back and stick it with a little bit of water. Lay the dough into a tart pan and fill it with apple coconut filling. Decorate the top of the pie with apple slices. Bake at 175 C for about 35-40 minutes. When baked brush it with some maple syrup.  Serve with whipped coconut cream.

  9. To se je pa vceraj pri nas doma peklo! ;)
    ODLICNA pita,res;) Jaz je sicer na koncu nisem premazala z javorjevim sirupom,a je bila vseeno bozanska in je cist prehitro zginla:( ;)

But somehow I cannot see that function. I am afraid I am not really a facebooker so that rout will probably mean I will miss your post.
